Daily Activity 7/2/18

Hey, back again with me. Today i wanna tell you about how happy i am when my friends told me that the Orange Flutter what i prepared yesterday and made today taste really good. yeay! i'm very very happy lol actually i was really worried if the orange flavor tasteless.

So, today was different than yesterday because there are three seniors in charge in my class. hm, for your information.. i almost like did nothing today, because i rounded the chocolate and coating with another melted chocolate. lucky me i have the best member group that know what they should do. So they helped me to finished the Orange Flutter and served in oval plate.

Equipment and Utensil 6/2/18

Parchment Paper 

Some home bakers cannot be without parchment paper to line their baking sheets and pans, while others tend to grease the tins. Parchment paper helps with cake removal, does make pan cleaning quicker and it keeps them from discoloring.

Daily Activity 6/2/18

Hello guys, today i want to share everything what i and my friends did in Kitchen Poltekpar. So, our class got Celebes Buffet for this Tuesday. And my group got main course menu, which the menus are Konro Bakar, Acar, Kerupuk, Sambal Tomat, Peanut Sauce and Steam rice.

On Monday, as usual my group discussed who handle the menus, and i did the Konro Bakar with Yuli, and Aldy. Aldy made the spices paste and i did the rest with yuli. it's really confusing because we only did the preparation on Monday, and Tuesday we did the final touch. For your information, Mr Faisal told us that "why you took too much hours to made konro bakar ?".

Base Genep (Bumbu Genep)

Ingredient:

• 20gr          Dried shrimp paste
• 150gr        Shallot, peel and thinly slice
• 100gr        Garlic, peel and thinly slice
• 30gr          Large red chili, deseeded slice
• 25gr          Bird's eye chili, slice
• 50gr          Ginger, peeled and finely chopped
• 40gr          Lesser galangal, peeled, finely chop
• 65gr          Turmeric, peeled and finely chopped
• 80gr          Galangal, peeled and finely chopped
• 30gr          Candlenut, roasted and crusted
• 8gr            Black peppercorn, roasted and crusted
• 100gr        Lemongrass, finely chopped
• 15gr          Salt
• 20ml         Coconut oil
• 3pcs          Salam leaves

Ayam Betutu Recipe

Ingredients:

• 3 Whole       Baby Chicken
• pinch            Salt
• pinch            Black Peppercorn
•                      Banana Leaves for wrap

Daily Report (Part 6)

Sebelumnya saya ingin meminta maaf karena pada postingan kali ini, saya langsung melompat ke tanggal 28 November. Selama saya mendapatkan bagian di Fruit & Juices saya tidak sempat membuat sesi dokumentasi selama 2 bulan, Pada saat itu saya benar-benar dipush agar bergerak dan bekerja lebih cepat dikarenakan kondisi breakfast pada waktu itu sangat lah ramai.

28 November saya dipindahkan di Main Kitchen, dan shift saya pada saat itu adalah jam 14:00 - 23:00. Awalnya saya juga bingung harus melakukan apa, karena baru pertama kali saya masuk siang. Setelah berbicara pada supervisor dan anak-anak training lainnya, barulah saya mengerti pekerjaan yang harus saya kerjakan. Jadi, saya pada section ini hanya menghandle orderan-orderan Ala Carte. Awal-awalnya saya diajarkan bagaimana Plating menu, lumayan rumit karena saya diwajibkan untuk menghafalnya hanya dalam waktu seminggu.

Daily Report (Part 5)

26 September saya memulai hari pertama saya di section baru. Saya ditempatkan pada bagian Breakfast lebih tepatnya pada bagian Fruits & Juices. Pada section ini, saya diharuskan masuk pada pukul 04:30 AM Dikarenakan tempat kost saya berada di daerah denpasar sedangkan Hotel Courtyard Marriot berada di Nusa Dua, mau tidak mau saya harus bangun lebih pagi. Saya bangun pukul 03:00 AM untuk menghindari keterlambatan pada hari pertama. Sekitar pukul 04:06 AM saya sudah sampai di kitchem hotel. awalnya saya tidak tau apa yang harus saya lakukan, untungnya saya bertemu dengan bli Kadek. Bli Kadek ini dapat shift malam dan dia yang bertugas untuk prepare breakfast. Dia memberitahu apa-apa saja yang harus saya kerjakan, mulai dari ngeluarin troli salad yang ada di banquet chiller, mengambil troli lainnya untuk mengangkut sereal, susu, cold cut, hingga buah-buah yang akan dihidangkan, membuat fresh jus sampai ke setup breakfast di ,MoMo Cafe.
